Nick is Gifted, talented, and inspired by nature. Nick Wallace's mission is to remain focused on the beauty of food. Nick was voted Best Chef for Jackson, MS, the last four years. He was named Best Chef of Mississippi 2020 and has remained on the list of Best Chef America.

National Recognition and Cooking Around The World

Nick has also been featured on many Publication Networks such as Southern Living Magazine, Food Networks "Comfort Nation" (Season 2), Food Network's "Chopped" and Alton's Challenge on Food Networks "Chopped," Food Network's "Cutthroat Kitchen," Food Network's Canada "Firemasters". "Unexplored America - Mississippi." It aires in France on the Channel "Voyage." Beautiful Destinations. Two Features with Visit USA (Beautiful Destinations).

Nick participated in 50 States – 50 Chefs (Flavored Nation) in Chattanooga, TN, and has also been blessed to present five James Beard Foundation "Mississippi Themed"  dinners in New York. He is known for redefining the Southern experience.

Nick can express his understanding of food through the taste and appearance of every plate of food that he prepares. While giving his grandmothers, Queen Morris and Lennel Donald credit for his beginning love for culinary arts, everyone would agree that Wallace's talents lie within his heart and have been there before birth.

Nick combines his family farm origins with a sophisticated French technique to create his modern Mississippi cuisine that is exceptionally pleasing to the pallet.

Nick has served as Executive Chef for some of the country's largest and most prominent museums and hotels. Through these positions, both his leadership skills and drive for continuous innovation flourish.

Nick Wallace is currently Chef Partner at the Capital Club of Jackson, Founder/Chef of Nick Wallace Culinary, Nick Wallace Catering, and the important Non-Profit Creativity Kitchen, giving kids and families the utmost attention inside the public schools, teaching and preparing the best experience ever.

Giving Back

Nick works closely with local farmers. With the ability to produce healthier fresh foods, Wallace has moved his culinary talent and innovative ways into Jackson Public Schools through his non-profit organization, Creativity Kitchen. Through Creativity Kitchen, Nick works closely with the Jackson Public Schools' chefs to provide better tasting and healthier food for scholars. Just recently, Creativity Kitchen partnered with Whole Foods 5% Community Giving Program and put the money back into the community by donating a percentage of it to one of the local elementary schools. Nick's vision for culinary innovation, understanding of flavor and technique have formed an exquisite growing of innovative cuisine.

Nick continues to reach out to the community by partnering with organizations such as Dole, Novo Nordisk, American Cancer Society, Co-Chair of Share the Gulf, Partnership for a Healthy Mississippi. Nick will continue to use his gifts, abilities, and talents to touch lives through innovation, palate-pleasing cuisine, and humbleness.

What we do

Our team, at Nick Wallace Culinary (NWC), based out of Jackson, Mississippi, is all about place. The places where we cook,  where our ingredients come from, and the places where diners eat. NWC is led by Executive Chef Nick Wallace, whose own Mississippi roots and classical French training combine beautifully resulting in his unique Modern Mississippian cuisine.

The heart and spirit of NWC is deeply rooted in Mississippi, and we advocate for the distribution of home-grown and farm-raised products. We are a resource for local farmers, regional chefs, restaurateurs, and for individual families who are as passionate about cooking food that is close to home as we are.

allows me to use my passion to create opportunities to come closer to those that welcome my personal take on food.  As a chef, my goal has always been to use organic food from the environment in my dishes that surrounds us and connects us while nourishing each individuals soul.  I only choose to use local ingredients and fresh fruits and vegetables from local farmers to shape my amazing Chef Nick Wallace Signature Dishes. As a firm believer in family, I draw inspiration from where the heart is, the home. With that being said, I have decided to launch a unique approach to connect Mississippi families and remind them of the Southern roots of togetherness through the joy of food. Your kitchen is the heart and soul of your home and that is where nourishment should begin. With From My Hands To Your Kitchen I bring a culinary experience directly to you, that you will never forget.

It all started when...

Chef Nick Wallace realized that our children needed healthy meals at school. For some of them, what they eat at school is the only opportunity they would get to eat an actual meal.

Creativity Kitchen, a non-profit organization, was created out of the passion of others, and was created to:

  • Show our children how to be and remain healthy
  • How to grow their own foods
  • How to take food directly from the farm to their own kitchen

Working closely with Jackson Public School's, Chef Nick Wallace creates scholar friendly recipes with the health and nutrition need of each scholar in mind. He then meets with each school's kitchen staff and walks them through preparing each recipe to ensure that there are no questions in preparing the meal.

I have worked with Chef Nick throughout my time in Jackson, MS, working with different food, education, and health-related non-profit organizations. He is always a joy to work with and brings excellence to the table! This summer, Chef Nick catered a leadership training, hosted by the National Center for Appropriate Technology. We had a room full of about 36 food systems leaders from around the state (farmers, community advocates, food policy council members, etc.). Training participants raved that it was the "best conference food" they had ever had. We are especially grateful for how Chef Nick supports his local community and local farmers; we had some specific requests about how ingredients would be sourced for the meal, and he fulfilled the requests with enthusiasm and ease.

The meal was fresh and fabulous. Shaved salad, brisket that melted in your mouth, salmon pasta to die for, fried rice that was delicious and fresh sautéed vegetables. Wow! What a great night. I would definitely recommend Nick for any dinner party!!

Hey, my name is Talya and I love food! Today I got the opportunity to try some great food prepared by Chef Nick. He and his staff (Glenn and Grace) were the caterers for an event that I hosted. The brunch consisted of eggs, sautéed vegetables, potatoes, fruit, turkey sausage, chicken and petit fours. When Nick and I met to discuss the menu he found out that I have a love for desserts. The petit fours were the star of the meal. The carrot cake and butter crunch were my favorites. The flavors married well in each of the items. Although my Ladybug enjoyed the fruit the most she noted that her chicken was delicious. Six year olds are hard to please. 🙄
The staff was beyond professional. He and I didn't discuss decor; however, it all blended in. Five stars all around. Yes, I will use him again!
